These air fryer zucchini fries are crispy on the outside and tender on the inside, making them the perfect healthy snack or side dish.

- 2 medium zucchinis, cut into fries
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (Panko or regular)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- Olive oil spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In one bowl, place the flour. In a second bowl, add the beaten eggs. In a third bowl, mix the breadcrumbs, garlic powder, onion powder, salt, pepper, and paprika.
- Dip each zucchini fry first in the flour, shaking off excess, then in the egg, and finally into the breadcrumb mixture, pressing gently to adhere.
- Place the coated zucchini fries in the air fryer basket in a single layer. Spray lightly with olive oil.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
- For extra crispiness, you can double-coat the zucchini fries by repeating the egg and breadcrumb steps.
- Feel free to season the breadcrumbs with your favorite herbs or spices.
