- 2 cups of broccoli florets
- 2 cups of cauliflower florets
- 2 cups of bell peppers, sliced
- 1 cup of carrots, sliced
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, combine the broccoli, cauliflower, bell peppers, and carrots.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, onion powder, salt, and pepper.
- Toss the vegetables until they are evenly coated with the oil and seasonings.
- Place the coated vegetables in the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to do this in batches.
- Air fry the vegetables for 10-12 minutes, shaking the basket halfway through the cooking time for even cooking.
- Check for doneness; the vegetables should be tender and slightly crispy. If needed, air fry for an additional 2-3 minutes.
- Once cooked, remove the vegetables from the air fryer and serve immediately.
Notes
- Feel free to mix and match your favorite vegetables, such as zucchini, asparagus, or green beans.
- For added flavor, try tossing the vegetables with your favorite herbs or a splash of balsamic vinegar before cooking.
