A luxurious and decadent tiramisu torte that combines the classic flavors of coffee, mascarpone, and cocoa in a beautiful layered cake.


Ingredients

  • 1 cup strong brewed coffee, cooled
  • 1/2 cup coffee liqueur (optional)
  • 4 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 cup mascarpone cheese, softened
  • 1 1/2 cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies (savoiardi)
  • 2 tablespoons unsweetened cocoa powder, for dusting
  • Dark chocolate shavings, for garnish (optional)

Instructions

  1. In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Set aside.
  2. In a large mixing bowl, beat the egg yolks and sugar together until pale and fluffy.
  3. Fold in the mascarpone cheese until smooth and well combined.
  4. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form.
  5. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  6. In another bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the mascarpone mixture, taking care not to deflate the batter.
  7. Dip each ladyfinger into the coffee mixture for about 2 seconds, ensuring they are soaked but not soggy.
  8. Arrange a layer of soaked ladyfingers in the bottom of a springform pan.
  9. Spread half of the mascarpone mixture over the ladyfingers, smoothing it out with a spatula.
  10. Repeat the process with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  11. Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the torte to set.
  12. Before serving, dust the top with cocoa powder and garnish with dark chocolate shavings if desired.

Notes

  • For best results, use fresh mascarpone cheese.
  • Make sure to let the torte chill for several hours to enhance the flavors.
  • You can adjust the coffee liqueur to your taste or omit it entirely for a non-alcoholic version.
