Ingredients

  • 1/2 cup coffee liqueur (optional)
  • 3 large eggs, separated
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1 1/2 cups heavy whipping cream
  • 24 ladyfingers
  • Cocoa powder, for dusting
  • Dark chocolate shavings, for garnish (optional)

Instructions

  1. In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Set aside.
  2. In a mixing bowl, whisk the egg yolks and sugar together until pale and creamy. Stir in the vanilla extract and mascarpone cheese until smooth.
  3. In a separate bowl, beat the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  4. In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture, taking care not to deflate the mixture.
  5. Dip each ladyfinger into the coffee mixture for about 1-2 seconds, ensuring they are soaked but not soggy.
  6. Arrange a layer of soaked ladyfingers at the bottom of a springform pan.
  7. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture on top.
  8. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  9. Before serving, dust with cocoa powder and garnish with dark chocolate shavings, if desired.

Notes

  • For a deeper coffee flavor, increase the amount of coffee liqueur.
  • Ensure the mascarpone is at room temperature for easier mixing.
  • This torte can be made a day in advance and stored in the refrigerator.
