- 2 cups strong brewed coffee, cooled
- 1/2 cup coffee liqueur (optional)
- 3 large eggs, separated
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup mascarpone cheese
- 1 1/2 cups heavy whipping cream
- 24 ladyfingers
- Cocoa powder, for dusting
- Dark chocolate shavings, for garnish (optional)
Instructions
- In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Set aside.
- In a mixing bowl, whisk the egg yolks and sugar together until pale and creamy. Stir in the vanilla extract and mascarpone cheese until smooth.
- In a separate bowl, beat the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully combined.
- In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture, taking care not to deflate the mixture.
- Dip each ladyfinger into the coffee mixture for about 1-2 seconds, ensuring they are soaked but not soggy.
- Arrange a layer of soaked ladyfingers at the bottom of a springform pan.
- Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture on top.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, dust with cocoa powder and garnish with dark chocolate shavings, if desired.

- For a deeper coffee flavor, increase the amount of coffee liqueur.
- Ensure the mascarpone is at room temperature for easier mixing.
