Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 2 cups mascarpone cheese
  • 2 tablespoons cocoa powder, for dusting
  • Chocolate shavings, for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Slowly pour in the cooled coffee and coffee liqueur, mixing until fully incorporated.
  5. Gently fold in the mascarpone cheese until smooth.
  6. Pour the cheesecake batter over the prepared crust in the springform pan.
  7. Bake for 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake in the oven for 1 hour.
  8. Remove the cheesecake from the oven and cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.
  9. Before serving, dust the top with cocoa powder and garnish with chocolate shavings.
