- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup mascarpone cheese
- 1 cup powdered sugar
- 2 large eggs
- 1 cup strong brewed coffee, cooled
- 1 teaspoon vanilla extract
- 1 tablespoon coffee liqueur (optional)
- Cocoa powder for dusting
- Chocolate shavings for garnish (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat cream cheese and mascarpone cheese until smooth and creamy.
- Add in powdered sugar, eggs, brewed coffee, vanilla extract, and coffee liqueur (if using). Mix until well combined and smooth.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake in with the door ajar for 1 hour to cool slowly.
- Remove from the oven and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder and garnish with chocolate shavings.
Notes
- For a richer coffee flavor, use espresso in place of brewed coffee.
- Make sure all your ingredients are at room temperature for the best texture.
- You can prepare this cheesecake a day in advance for enhanced flavors.
