Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup mascarpone cheese
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 tablespoon coffee liqueur (optional)
  • Cocoa powder for dusting
  • Chocolate shavings for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and mascarpone cheese until smooth and creamy.
  4. Add in powdered sugar, eggs, brewed coffee, vanilla extract, and coffee liqueur (if using). Mix until well combined and smooth.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly.
  7. Turn off the oven and leave the cheesecake in with the door ajar for 1 hour to cool slowly.
  8. Remove from the oven and refrigerate for at least 4 hours, preferably overnight.
  9. Before serving, dust with cocoa powder and garnish with chocolate shavings.

Notes

  • For a richer coffee flavor, use espresso in place of brewed coffee.
  • Make sure all your ingredients are at room temperature for the best texture.
  • You can prepare this cheesecake a day in advance for enhanced flavors.
