This tiramisu birthday cake combines the classic flavors of tiramisu with the celebratory nature of a birthday cake. Layers of coffee-soaked sponge cake, creamy mascarpone frosting, and a dusting of cocoa powder create a delightful dessert that will impress your guests.

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt.
  3. Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
  4. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  6. Once the cakes are cooled, prepare the coffee soaking syrup by mixing the brewed coffee with 1 tablespoon of sugar (optional).
  7. In a separate bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until stiff peaks form to create the frosting.
  8. To assemble the cake, place one layer of cake on a serving plate. Brush with the coffee soaking syrup until well soaked.
  9. Spread a layer of the mascarpone frosting over the soaked cake layer.
  10. Place the second layer of cake on top and repeat the soaking and frosting process.
  11. Finish by frosting the top and sides of the cake with the remaining mascarpone frosting.
  12. Dust the top of the cake with cocoa powder before serving.

Notes

  • For added flavor, you can incorporate espresso powder into the cake batter.
  • This cake can be made a day ahead; just keep it covered in the refrigerator.
  • For a more indulgent experience, consider adding chocolate shavings on top of the cake.
