- 2 pieces Chicken Breasts
- 1 cup Chicken Broth
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 4 medium Potatoes
- 4 tablespoons Butter
- 1/2 cup Milk
Instructions
- Season chicken breasts with garlic powder, onion powder, salt, and black pepper.
- Heat olive oil in the pressure cooker on the sauté setting. Add chicken and sear for 2-3 minutes on each side until browned.
- Pour in chicken broth, then lock the lid and cook on high pressure for 10 minutes.
- While chicken is cooking, peel and chop potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
- Release pressure from the cooker and remove chicken; let rest.
- Drain potatoes and add butter and milk. Mash until creamy and smooth.
- Serve chicken breasts over buttery mashed potatoes.
