Description

This recipe features tender, juicy chicken breasts cooked to perfection in a pressure cooker, paired with creamy, buttery mashed potatoes for a comforting meal.

Ingredients

Scale
  • 2 pieces Chicken Breasts
  • 1 cup Chicken Broth
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 4 medium Potatoes
  • 4 tablespoons Butter
  • 1/2 cup Milk

Instructions

  1. Season chicken breasts with garlic powder, onion powder, salt, and black pepper.
  2. Heat olive oil in the pressure cooker on the sauté setting. Add chicken and sear for 2-3 minutes on each side until browned.
  3. Pour in chicken broth, then lock the lid and cook on high pressure for 10 minutes.
  4. While chicken is cooking, peel and chop potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
  5. Release pressure from the cooker and remove chicken; let rest.
  6. Drain potatoes and add butter and milk. Mash until creamy and smooth.
  7. Serve chicken breasts over buttery mashed potatoes.

Notes

  • For extra flavor, marinate chicken in spices for 30 minutes before cooking.
  • You can add garlic or herbs to the mashed potatoes for additional flavor.
  • Leftover chicken can be shredded and used in salads or sandwiches.
