Description

This tender chuck roast is slow-cooked to perfection in the oven, served alongside crispy roasted potatoes and rich gravy, making for a comforting and delicious meal.


Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)
  • 1 pound baby potatoes, halved
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the chuck roast generously with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove from the pot and set aside.
  4. In the same pot, add chopped onion and minced garlic. Cook until softened, about 3-4 minutes.
  5. Return the roast to the pot and add beef broth, Worcestershire sauce, and thyme. Bring to a simmer.
  6. Cover the pot and transfer it to the preheated oven. Cook for 3 to 4 hours, or until the roast is tender and easily pulls apart with a fork.
  7. About 30 minutes before the roast is done, toss baby potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven until crispy and golden, about 25-30 minutes.
  8. Once the roast is done, remove it from the oven and let it rest for 15 minutes before slicing.
  9. To make the gravy, strain the cooking liquid into a saucepan. In a small bowl, mix butter and flour to form a paste. Whisk the paste into the cooking liquid over medium heat until thickened.
  10. Serve the sliced roast with crispy roasted potatoes and drizzle with gravy.

Notes

  • For extra flavor, add carrots and celery to the pot with the onions and garlic.
  • If you prefer, you can use a slow cooker on low for 6-8 hours instead of the oven.
