Description
This tender chuck roast is slow-cooked to perfection in the oven, served alongside crispy roasted potatoes and rich gravy, making for a comforting and delicious meal.

- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)
- 1 pound baby potatoes, halved
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
Instructions
- Preheat the oven to 325°F (165°C).
- Season the chuck roast generously with salt and pepper.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove from the pot and set aside.
- In the same pot, add chopped onion and minced garlic. Cook until softened, about 3-4 minutes.
- Return the roast to the pot and add beef broth, Worcestershire sauce, and thyme. Bring to a simmer.
- Cover the pot and transfer it to the preheated oven. Cook for 3 to 4 hours, or until the roast is tender and easily pulls apart with a fork.
- About 30 minutes before the roast is done, toss baby potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven until crispy and golden, about 25-30 minutes.
- Once the roast is done, remove it from the oven and let it rest for 15 minutes before slicing.
- To make the gravy, strain the cooking liquid into a saucepan. In a small bowl, mix butter and flour to form a paste. Whisk the paste into the cooking liquid over medium heat until thickened.
- Serve the sliced roast with crispy roasted potatoes and drizzle with gravy.
Notes
- For extra flavor, add carrots and celery to the pot with the onions and garlic.
- If you prefer, you can use a slow cooker on low for 6-8 hours instead of the oven.
