A refreshing and nutritious Mediterranean quinoa salad, perfect for summer lunches at work. Packed with vegetables, feta cheese, and a zesty lemon dressing.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
  2. In a large bowl, combine the diced cucumber, cherry tomatoes, bell pepper, red onion, feta cheese, olives, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Add the cooled quinoa to the vegetable mixture and pour the dressing over. Toss gently to combine.
  5. Store in airtight containers for lunch throughout the week. Serve chilled or at room temperature.
