- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
- In a large bowl, combine the diced cucumber, cherry tomatoes, bell pepper, red onion, feta cheese, olives, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add the cooled quinoa to the vegetable mixture and pour the dressing over. Toss gently to combine.
- Store in airtight containers for lunch throughout the week. Serve chilled or at room temperature.
