Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic, Italian seasoning, salt, and pepper.
  3. Using a sharp knife, make a pocket in each chicken breast by slicing horizontally through the thickest part.
  4. Stuff each chicken breast with the cheese and spinach mixture, securing the opening with toothpicks if necessary.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  6. Sear the stuffed chicken breasts for about 4-5 minutes on each side until golden brown.
  7. Sprinkle paprika over the top for added flavor, if desired.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Remove from the oven and let rest for 5 minutes before removing toothpicks and slicing.
