- 1 cup fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 teaspoon paprika (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the spinach, cream cheese, mozzarella cheese, Parmesan cheese, garlic, Italian seasoning, salt, and pepper.
- Using a sharp knife, make a pocket in each chicken breast by slicing horizontally through the thickest part.
- Stuff each chicken breast with the cheese and spinach mixture, securing the opening with toothpicks if necessary.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Sear the stuffed chicken breasts for about 4-5 minutes on each side until golden brown.
- Sprinkle paprika over the top for added flavor, if desired.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before removing toothpicks and slicing.
