Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
  4. Add ground beef to the skillet and cook until browned. Drain excess fat.
  5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix until well combined.
  6. Stuff each bell pepper with the beef mixture, packing it down slightly.
  7. Place the stuffed peppers upright in a baking dish. If they don’t stand, slice a small portion off the bottom to create a flat base.
  8. Cover the dish with foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a few minutes before serving.

Notes

  • Feel free to customize the stuffing with your favorite ingredients such as corn, black beans, or different spices.
  • You can use pre-cooked rice or any leftover rice you have on hand.
  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the meat mixture.
