- 4 large bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix until well combined.
- Stuff each bell pepper with the beef mixture, packing it down slightly.
- Place the stuffed peppers upright in a baking dish. If they don’t stand, slice a small portion off the bottom to create a flat base.
- Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- Feel free to customize the stuffing with your favorite ingredients such as corn, black beans, or different spices.
- You can use pre-cooked rice or any leftover rice you have on hand.
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the meat mixture.
