- 2 cups cooked chicken, shredded
- 1 can (15 oz) sweet corn, drained
- 1 can (10 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese, divided
- 1/2 cup milk
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup crushed tortilla chips
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, sweet corn, cream of chicken soup, sour cream, 1/2 cup of cheddar cheese, milk, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish and spread it evenly.
- Top the mixture with the remaining 1/2 cup of cheddar cheese and crushed tortilla chips.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
Notes
- You can use rotisserie chicken for a quicker option.
- Feel free to add diced jalapeños for some heat.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
