Ingredients

  • 2 cups All-purpose flour
  • 1 1/2 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Whole milk
  • 16 ounces Mascarpone cheese
  • 1 cup Heavy cream
  • 1/4 cup Powdered sugar
  • 2 cups Fresh strawberries, sliced
  • as desired Edible flowers, for decoration

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add the softened butter, eggs, vanilla extract, and milk to the dry ingredients. Beat on medium speed until smooth.
  4. Divide the batter evenly between the prepared cake pans and smooth the tops.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  6. In a separate bowl, whip the heavy cream until soft peaks form. In another bowl, mix the mascarpone cheese and powdered sugar until smooth.
  7. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  8. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of mascarpone cream over the top, then add a layer of sliced strawberries.
  9. Place the second cake layer on top and repeat the mascarpone and strawberry layers.
  10. Decorate the top of the cake with remaining mascarpone cream and arrange edible flowers as desired.
  11. Chill for at least 1 hour before serving to allow flavors to meld.

Notes

  • For the best flavor, use fresh, ripe strawberries.
  • Ensure all ingredients are at room temperature before starting.
  • You can substitute any edible flowers of your choice for decoration.
