Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup, divided granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 34 tablespoons ice water
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice
  • for serving vanilla ice cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the flour, 2 tablespoons of sugar, and salt.
  3. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  4. Gradually add ice water, stirring until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for 30 minutes.
  5. In another bowl, toss the sliced strawberries with the remaining sugar and lemon juice. Let sit for 10-15 minutes.
  6. On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
  7. Arrange the strawberry mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the strawberries, pleating as necessary.
  8. Sprinkle the galette with a little sugar and bake for 30-35 minutes, until the crust is golden brown.
  9. Allow to cool slightly before slicing. Serve warm with vanilla ice cream.
