A delicious and rustic strawberry galette served warm with a scoop of vanilla ice cream, perfect for summer desserts.

- 1 1/4 cups all-purpose flour
- 1/4 cup, divided granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 3–4 tablespoons ice water
- 2 cups fresh strawberries, hulled and sliced
- 1 tablespoon lemon juice
- for serving vanilla ice cream
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine the flour, 2 tablespoons of sugar, and salt.
- Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, stirring until the dough comes together. Form into a disk, wrap in plastic wrap, and chill for 30 minutes.
- In another bowl, toss the sliced strawberries with the remaining sugar and lemon juice. Let sit for 10-15 minutes.
- On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
- Arrange the strawberry mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the strawberries, pleating as necessary.
- Sprinkle the galette with a little sugar and bake for 30-35 minutes, until the crust is golden brown.
- Allow to cool slightly before slicing. Serve warm with vanilla ice cream.
