A classic strawberry shortcake that is easy to make and perfect for any occasion.

- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Whipped cream for serving
Instructions
- In a medium bowl, combine sliced strawberries and 1/4 cup sugar. Toss to coat and set aside to macerate for about 30 minutes.
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Pour in the heavy cream and vanilla extract, stirring until just combined.
- Turn the dough onto a floured surface and knead gently a few times. Pat into a 1-inch thick circle and cut into rounds with a biscuit cutter.
- Place the rounds on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
- Let the shortcakes cool slightly, then slice them in half horizontally.
- Layer the bottom half with macerated strawberries and whipped cream, then top with the other half and more strawberries and whipped cream.
Notes
- You can substitute the strawberries with other fruits like blueberries or raspberries.
- For added flavor, consider adding a splash of lemon juice to the strawberries while macerating.
