  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. In a medium bowl, combine sliced strawberries and 1/4 cup sugar. Toss to coat and set aside to macerate for about 30 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Pour in the heavy cream and vanilla extract, stirring until just combined.
  6. Turn the dough onto a floured surface and knead gently a few times. Pat into a 1-inch thick circle and cut into rounds with a biscuit cutter.
  7. Place the rounds on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
  8. Let the shortcakes cool slightly, then slice them in half horizontally.
  9. Layer the bottom half with macerated strawberries and whipped cream, then top with the other half and more strawberries and whipped cream.

Notes

  • You can substitute the strawberries with other fruits like blueberries or raspberries.
  • For added flavor, consider adding a splash of lemon juice to the strawberries while macerating.
