- 2 cups fresh strawberries, sliced
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- In a medium bowl, combine sliced strawberries and granulated sugar. Toss to coat and let them sit for about 10 minutes to release their juices.
- Preheat your oven to 425°F (220°C).
- In another bowl, mix together flour, baking powder, and salt.
- Add melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined.
- Drop spoonfuls of the batter onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- While the cakes are baking, whip the heavy cream with powdered sugar until soft peaks form.
- Once the cakes are done, let them cool slightly. Cut them in half horizontally.
- Layer the bottom half of the cake with strawberries and their juice, then add a dollop of whipped cream. Place the top half of the cake on and garnish with more strawberries and whipped cream.
Notes
- You can substitute the strawberries with other berries like blueberries or raspberries for variety.
- For an extra touch, add a splash of lemon juice to the strawberries for brightness.
