- 1 lb steak (sirloin or ribeye recommended)
- 2 cups arugula
- 1/2 cup shaved Parmesan cheese
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Season the steak with salt and pepper. Heat a skillet over medium-high heat and cook the steak for 4-5 minutes on each side or until desired doneness.
- Remove the steak from the skillet and let it rest for a few minutes before slicing it into thin strips.
- In a large bowl, combine the cooked pasta, sliced steak, arugula, and shaved Parmesan.
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper.
- Drizzle the dressing over the pasta salad and toss to combine.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
