Ingredients

- 4 cups (500g) all-purpose flour
- 1 1/2 teaspoons active dry yeast
- 1 1/2 teaspoons salt
- 1 3/4 cups (420ml) warm water
- 1/4 cup (60ml) olive oil, plus more for drizzling
- Fresh herbs (rosemary, thyme, or oregano), for topping
- Coarse sea salt, for sprinkling
Instructions
- In a large mixing bowl, combine the flour, yeast, and salt.
- Add the warm water and olive oil to the dry ingredients. Mix until a rough dough forms.
- Cover the bowl with plastic wrap or a damp cloth and let it rise in a warm place for about 1 to 2 hours, or until doubled in size.
- Preheat your oven to 425°F (220°C).
- Grease a baking sheet with olive oil. Turn the dough out onto the prepared baking sheet and stretch it gently to fit the pan. Use your fingers to dimple the surface of the dough.
- Drizzle more olive oil over the top of the dough and sprinkle with fresh herbs and coarse sea salt.
- Let the dough rise again for about 20-30 minutes.
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
- Remove from the oven and let cool slightly before slicing. Serve warm.
Notes
- For a more intense flavor, let the dough rise in the refrigerator overnight.
- Experiment with different herbs and toppings like garlic, sun-dried tomatoes, or olives.
- Store leftover focaccia in an airtight container at room temperature for up to 2 days.
