Ingredients

  • 2 heads of romaine lettuce, halved lengthwise
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup Parmesan cheese, grated
  • 1/2 cup Caesar dressing
  • 1/4 cup croutons
  • Fresh lemon juice for drizzling
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the cut sides of the romaine with olive oil and season with salt and pepper.
  3. Place the romaine on the grill, cut side down, and grill for 2-3 minutes until charred and slightly wilted.
  4. Remove from the grill and set aside.
  5. To make the Parmesan crisps, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  6. Spoon small mounds of grated Parmesan onto the baking sheet, spacing them apart.
  7. Bake for 5-7 minutes, or until the cheese is melted and golden. Let cool and harden.
