Description
A twist on the classic Caesar salad, this smoky grilled version features charred romaine and homemade Parmesan crisps for added flavor and texture.
Ingredients

- 2 heads of romaine lettuce, halved lengthwise
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup Parmesan cheese, grated
- 1/2 cup Caesar dressing
- 1/4 cup croutons
- Fresh lemon juice for drizzling
- Fresh parsley, chopped for garnish
Instructions
- Preheat the grill to medium-high heat.
- Brush the cut sides of the romaine with olive oil and season with salt and pepper.
- Place the romaine on the grill, cut side down, and grill for 2-3 minutes until charred and slightly wilted.
- Remove from the grill and set aside.
- To make the Parmesan crisps, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Spoon small mounds of grated Parmesan onto the baking sheet, spacing them apart.
- Bake for 5-7 minutes, or until the cheese is melted and golden. Let cool and harden.
- In a large bowl, toss the grilled romaine with Caesar dressing until coated.
- Plate the grilled romaine, top with croutons, Parmesan crisps, a drizzle of fresh lemon juice, and garnish with chopped parsley.
Notes
- For extra smokiness, consider adding smoked paprika to the dressing.
- You can substitute store-bought croutons with homemade for a fresher taste.
