Instructions
- Using a vegetable peeler or mandoline, shave the zucchinis into thin ribbons. Place them in a large bowl.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper until well combined.
- Pour the lemon vinaigrette over the shaved zucchini and toss gently to coat.
- Add the grated Parmesan cheese and toasted pine nuts to the salad, tossing to combine.
