Ingredients

- 8 oz pasta (penne or fusilli recommended)
- 2 cups rotisserie chicken, shredded
- 2 cups spinach, fresh
- 1 cup cherry tomatoes, halved
- 1/2 cup parmesan cheese, grated
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the shredded rotisserie chicken to the skillet and stir to combine with the garlic.
- Add the spinach and cherry tomatoes to the skillet and cook until the spinach is wilted and the tomatoes are slightly softened, about 3-4 minutes.
- Stir in the cooked pasta, Italian seasoning, salt, and pepper. Mix well to combine all ingredients.
- Remove from heat and sprinkle with grated parmesan cheese. Toss to combine.
- Serve warm, garnished with fresh basil if desired.
