Ingredients

  • 8 oz pasta (penne or fusilli recommended)
  • 2 cups rotisserie chicken, shredded
  • 2 cups spinach, fresh
  • 1 cup cherry tomatoes, halved
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the shredded rotisserie chicken to the skillet and stir to combine with the garlic.
  4. Add the spinach and cherry tomatoes to the skillet and cook until the spinach is wilted and the tomatoes are slightly softened, about 3-4 minutes.
  5. Stir in the cooked pasta, Italian seasoning, salt, and pepper. Mix well to combine all ingredients.
  6. Remove from heat and sprinkle with grated parmesan cheese. Toss to combine.
  7. Serve warm, garnished with fresh basil if desired.
