Deliciously cheesy enchiladas made easy with rotisserie chicken.


Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour tortillas
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the diced onions until translucent.
  3. In a bowl, combine the shredded rotisserie chicken, half of the cheese, sautéed onions, cumin, and half of the enchilada sauce. Season with salt and pepper.
  4. Place about 1/4 cup of the chicken mixture in the center of each tortilla, roll them up, and place them seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  6. Bake for 20-25 minutes or until the cheese is bubbly and golden.
  7. Serve hot with sour cream on the side.
