Deliciously cheesy enchiladas made easy with rotisserie chicken.
Ingredients

- 2 cups rotisserie chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) enchilada sauce
- 8 small flour tortillas
- 1/2 cup diced onions
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Sauté the diced onions until translucent.
- In a bowl, combine the shredded rotisserie chicken, half of the cheese, sautéed onions, cumin, and half of the enchilada sauce. Season with salt and pepper.
- Place about 1/4 cup of the chicken mixture in the center of each tortilla, roll them up, and place them seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
- Serve hot with sour cream on the side.
