  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1/2 cup feta cheese, crumbled
  • Fresh basil for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Season both sides of the chicken breasts with garlic powder, paprika, salt, and pepper.
  3. Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until cooked through (internal temperature should reach 165°F).
  4. Remove the chicken from the skillet and let it rest for a few minutes.
  5. In the same skillet, add the cherry tomatoes and spinach. Cook for 2-3 minutes until the spinach is wilted and the tomatoes are softened.
  6. Slice the chicken breasts and return them to the skillet with the vegetables. Sprinkle feta cheese on top.
  7. Serve hot, garnished with fresh basil if desired.
