- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup spinach, fresh
- 1/2 cup feta cheese, crumbled
- Fresh basil for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Season both sides of the chicken breasts with garlic powder, paprika, salt, and pepper.
- Add the chicken breasts to the skillet and cook for 6-7 minutes on each side, or until cooked through (internal temperature should reach 165°F).
- Remove the chicken from the skillet and let it rest for a few minutes.
- In the same skillet, add the cherry tomatoes and spinach. Cook for 2-3 minutes until the spinach is wilted and the tomatoes are softened.
- Slice the chicken breasts and return them to the skillet with the vegetables. Sprinkle feta cheese on top.
- Serve hot, garnished with fresh basil if desired.
