- 2 lbs potatoes
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1/2 cup celery
- 1/4 cup red onion
- 3 hard-boiled eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley
Instructions
- In a large pot, bring salted water to a boil. Add diced potatoes and cook until fork-tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, combine mayonnaise, mustard, celery, red onion, hard-boiled eggs, salt, and black pepper.
- Add the cooled potatoes to the dressing mixture and gently fold until evenly coated.
- Refrigerate for at least 1 hour to allow flavors to meld.
- Garnish with fresh parsley before serving.
