- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- Juice of 1 lemon
- 1 package of pita chips or tortilla chips
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper.
- Skewer the shrimp and grill for 2-3 minutes on each side until pink and cooked through.
- In another bowl, combine cherry tomatoes, cucumber, feta cheese, basil, and lemon juice. Mix well.
- Serve the grilled shrimp on a platter with the salad mixture on the side.
- Accompany with pita chips or tortilla chips for dipping.

- Feel free to substitute shrimp with grilled chicken or veggies for a different option.
