  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • Juice of 1 lemon
  • 1 package of pita chips or tortilla chips

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper.
  3. Skewer the shrimp and grill for 2-3 minutes on each side until pink and cooked through.
  4. In another bowl, combine cherry tomatoes, cucumber, feta cheese, basil, and lemon juice. Mix well.
  5. Serve the grilled shrimp on a platter with the salad mixture on the side.
  6. Accompany with pita chips or tortilla chips for dipping.
