- 4 medium zucchini, spiralized
- 1 cup fresh basil leaves
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/3 cup olive oil
- Salt and pepper to taste
- 1/2 cup sun-dried tomatoes, chopped
Instructions
- In a food processor, combine basil, pine nuts, Parmesan cheese, and garlic. Pulse until finely chopped.
- With the processor running, slowly add olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste.
- In a large mixing bowl, combine the spiralized zucchini noodles with the pesto sauce. Toss until the noodles are evenly coated.
- Fold in the sun-dried tomatoes.
- Serve immediately, garnished with additional Parmesan cheese if desired.
