- 3 to 4 pounds of beef chuck roast
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, chopped
- 2 cups potatoes, cut into chunks
- 2 tablespoons fresh thyme or 1 tablespoon dried thyme
- 2 tablespoons fresh rosemary or 1 tablespoon dried rosemary
- 2 tablespoons Worcestershire sauce
- 1 tablespoon tomato paste
- 1 tablespoon cornstarch (optional, for thickening)
- 1 tablespoon water (optional, for thickening)
- 4 cups baby potatoes, halved
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Season the chuck roast with salt and pepper on both sides.
- Sear the roast in the pot for about 4-5 minutes on each side until browned. Remove the roast from the pot and set aside.
- Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent.
- Stir in the beef broth, scraping up any browned bits from the bottom of the pot. Add the carrots, potatoes, thyme, rosemary, Worcestershire sauce, and tomato paste.
- Return the roast to the pot, cover it, and transfer it to the preheated oven. Cook for about 3 to 4 hours, or until the meat is tender.
- While the roast is cooking, prepare the crispy golden roasted potatoes. In a bowl, toss the halved baby potatoes with melted butter, garlic powder, onion powder, salt, and pepper.
- Spread the potatoes on a baking sheet and roast in the oven at 400°F (200°C) for about 25-30 minutes, or until golden brown and crispy.
- Once the pot roast is done, you can thicken the gravy if desired by whisking together cornstarch and water, then adding it to the pot and simmering for a few minutes until thickened.
- Serve the pot roast alongside the crispy golden roasted potatoes, drizzling the gravy over the top.
