Ingredients

  • 3 to 4 pounds of beef chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, chopped
  • 2 cups potatoes, cut into chunks
  • 2 tablespoons fresh thyme or 1 tablespoon dried thyme
  • 2 tablespoons fresh rosemary or 1 tablespoon dried rosemary
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon water (optional, for thickening)
  • 4 cups baby potatoes, halved
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Season the chuck roast with salt and pepper on both sides.
  3. Sear the roast in the pot for about 4-5 minutes on each side until browned. Remove the roast from the pot and set aside.
  4. Add the chopped onion and minced garlic to the pot, sautéing until the onion is translucent.
  5. Stir in the beef broth, scraping up any browned bits from the bottom of the pot. Add the carrots, potatoes, thyme, rosemary, Worcestershire sauce, and tomato paste.
  6. Return the roast to the pot, cover it, and transfer it to the preheated oven. Cook for about 3 to 4 hours, or until the meat is tender.
  7. While the roast is cooking, prepare the crispy golden roasted potatoes. In a bowl, toss the halved baby potatoes with melted butter, garlic powder, onion powder, salt, and pepper.
  8. Spread the potatoes on a baking sheet and roast in the oven at 400°F (200°C) for about 25-30 minutes, or until golden brown and crispy.
  9. Once the pot roast is done, you can thicken the gravy if desired by whisking together cornstarch and water, then adding it to the pot and simmering for a few minutes until thickened.
  10. Serve the pot roast alongside the crispy golden roasted potatoes, drizzling the gravy over the top.
