- 4 cups cubed day-old bread
- 2 cups ripe peaches, sliced
- 2 cups ripe tomatoes, chopped
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the cubed bread on a baking sheet and drizzle with olive oil. Toss to coat.
- Bake the bread for 10-15 minutes, or until golden and crispy.
- In a large bowl, combine the peaches, tomatoes, red onion, and basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Add the toasted bread to the salad and toss again just before serving.
Notes
- For added flavor, consider marinating the onions in the vinegar for 10 minutes before adding to the salad.
