Ingredients

  • 4 cups cubed day-old bread
  • 2 cups ripe peaches, sliced
  • 2 cups ripe tomatoes, chopped
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the cubed bread on a baking sheet and drizzle with olive oil. Toss to coat.
  3. Bake the bread for 10-15 minutes, or until golden and crispy.
  4. In a large bowl, combine the peaches, tomatoes, red onion, and basil.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  6. Drizzle the dressing over the salad and toss gently to combine.
