- 8 oz pasta (your choice)
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese, grated (for serving)
- Fresh basil, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add bell pepper, zucchini, broccoli, and cherry tomatoes to the skillet. Sauté for about 5-7 minutes, or until the vegetables are tender.
- Stir in the cooked pasta and Italian seasoning. Mix well to combine and heat through. Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese and chopped fresh basil.
