Ingredients

  • 2 cups cooked rice (preferably cold)
  • 1 lb chicken breast, diced
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 tablespoons soy sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 2 green onions, sliced
  • Salt and pepper to taste
  • 1 teaspoon sesame oil (optional)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Remove chicken from the pan and set aside.
  4. In the same pan, add chopped onion and garlic. Sauté until fragrant, about 2-3 minutes.
  5. Add mixed vegetables and cook until heated through.
  6. Stir in the cooked rice and return the chicken to the pan.
  7. Add soy sauce, sriracha, and sesame oil. Mix well and cook for an additional 3-4 minutes, allowing the flavors to meld.
  8. Season with salt and pepper to taste.
  9. Garnish with sliced green onions before serving.
