A quick and easy one-pan meal that combines spicy chicken with flavorful fried rice, perfect for a weeknight dinner.

- 2 cups cooked rice (preferably cold)
- 1 lb chicken breast, diced
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 3 tablespoons soy sauce
- 2 tablespoons sriracha (adjust to taste)
- 2 green onions, sliced
- Salt and pepper to taste
- 1 teaspoon sesame oil (optional)
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Remove chicken from the pan and set aside.
- In the same pan, add chopped onion and garlic. Sauté until fragrant, about 2-3 minutes.
- Add mixed vegetables and cook until heated through.
- Stir in the cooked rice and return the chicken to the pan.
- Add soy sauce, sriracha, and sesame oil. Mix well and cook for an additional 3-4 minutes, allowing the flavors to meld.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
