A delicious and creamy no bake strawberry cheesecake that is perfect for summer gatherings or any time you crave a light and fruity dessert.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh strawberries, sliced
- ¼ cup strawberry jam
Instructions
- In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust. Refrigerate for 10 minutes.
- In a large bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread half of the cream cheese mixture over the crust. Layer half of the sliced strawberries on top.
- Spread the remaining cream cheese mixture over the strawberries. Top with the remaining strawberries.
- Drizzle strawberry jam over the top and use a knife to swirl it gently through the cheesecake.
- Cover and refrigerate for at least 4 hours or until set. Serve chilled.
Notes
- You can use store-bought graham cracker crust for convenience.
- For a more intense strawberry flavor, you can blend some of the strawberries into a puree and mix it into the cheesecake filling.
