Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon culinary lavender, finely chopped
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until combined and press into the bottom of mini muffin tins or silicone molds.
  2. In a large mixing bowl, beat the cream cheese until smooth. Add powdered sugar, lemon juice, lemon zest, lavender, vanilla extract, and salt. Beat until well combined and smooth.
  3. Spoon the cheesecake mixture over the graham cracker crust in the muffin tins, filling each mold almost to the top.
  4. Refrigerate for at least 4 hours or until set.
  5. Once set, carefully remove the cheesecake bites from the molds. Serve chilled and enjoy!
