- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon culinary lavender, finely chopped
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until combined and press into the bottom of mini muffin tins or silicone molds.
- In a large mixing bowl, beat the cream cheese until smooth. Add powdered sugar, lemon juice, lemon zest, lavender, vanilla extract, and salt. Beat until well combined and smooth.
- Spoon the cheesecake mixture over the graham cracker crust in the muffin tins, filling each mold almost to the top.
- Refrigerate for at least 4 hours or until set.
- Once set, carefully remove the cheesecake bites from the molds. Serve chilled and enjoy!
