  • 1/4 cup melted butter
  • 2 cups cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon culinary lavender, crushed
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are well coated.
  2. Press the mixture firmly into the bottom of mini muffin tins or silicone molds to create a crust. Chill in the refrigerator for about 10 minutes.
  3. In a large mixing bowl, beat the softened cream cheese until smooth.
  4. Add powdered sugar, lemon juice, lemon zest, crushed lavender, and vanilla extract. Mix until well combined.
  5. Gently fold in the whipped cream until no streaks remain.
  6. Spoon the cheesecake mixture over the chilled crusts in the muffin tins. Smooth the tops with a spatula.
  7. Chill the cheesecake bites in the refrigerator for at least 2 hours or until set.
