Ingredients

  • 1 cup ripe mashed bananas (about 23 bananas)
  • 1/2 cup sourdough starter (active and bubbly)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup melted butter or vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, sourdough starter, granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the baking soda, baking powder, salt, flour, and cinnamon (if using).
  4. Gradually add the dry ingredients to the banana mixture, stirring just until combined. Be careful not to overmix.
  5. Fold in the chopped walnuts or chocolate chips if desired.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
