- 1 cup ripe mashed bananas (about 2–3 bananas)
- 1/2 cup sourdough starter (active and bubbly)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup melted butter or vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the mashed bananas, sourdough starter, granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the baking soda, baking powder, salt, flour, and cinnamon (if using).
- Gradually add the dry ingredients to the banana mixture, stirring just until combined. Be careful not to overmix.
- Fold in the chopped walnuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For best flavor, use very ripe bananas with plenty of brown spots.
- Store leftover banana bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
- You can freeze the banana bread for up to 3 months. Wrap it tightly in plastic wrap and then in aluminum foil before freezing.
