- 1 cup mayonnaise
- 1 cup cotija cheese, crumbled

- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine corn kernels, sour cream, mayonnaise, cotija cheese, cilantro, lime juice, chili powder, garlic powder, salt, and pepper. Mix well until combined.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle shredded cheddar cheese on top, and if desired, add breadcrumbs for extra crunch.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with additional cilantro if desired.
