A classic creamy potato salad perfect for Memorial Day gatherings, made with tender potatoes, crunchy celery, and a tangy dressing.
Ingredients

- 2 pounds of potatoes, peeled and diced
- 1 cup of mayonnaise
- 2 tablespoons of Dijon mustard
- 1 tablespoon of apple cider vinegar
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of celery, diced
- 1/2 cup of red onion, diced
- 3 hard-boiled eggs, chopped
- 1/4 cup of fresh parsley, chopped
Instructions
- Boil the diced potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and let cool.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
- Add the cooled potatoes to the bowl and gently mix until well coated.
- Fold in the celery, red onion, hard-boiled eggs, and parsley.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Notes
- For added flavor, consider mixing in some chopped pickles or relish.
- This salad can be made a day in advance for convenience.
