  • 2 pounds of potatoes, peeled and diced
  • 1 cup of mayonnaise
  • 2 tablespoons of Dijon mustard
  • 1 tablespoon of apple cider vinegar

  • 1/2 teaspoon of black pepper
  • 1 cup of celery, diced
  • 1/2 cup of red onion, diced
  • 3 hard-boiled eggs, chopped
  • 1/4 cup of fresh parsley, chopped

Instructions

  1. Boil the diced potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and let cool.
  2. In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  3. Add the cooled potatoes to the bowl and gently mix until well coated.
