Ingredients

- 4 cups of coleslaw mix
- 1 cup of mayonnaise
- 1 tablespoon of apple cider vinegar
- 2 tablespoons of sugar
- 1 teaspoon of celery seed
- Salt and pepper to taste
- 2 cups of corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/4 cup of red onion, finely chopped
- 1 tablespoon of olive oil
- 1 tablespoon of lime juice
- 1 teaspoon of chili powder
- Salt to taste
- 1 lb of potatoes, diced
- 1/4 cup of butter
- 1/4 cup of chopped fresh parsley
- 1 tablespoon of garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, celery seed, salt, and pepper. Mix well and refrigerate for at least 30 minutes.
- In another bowl, combine corn, red bell pepper, red onion, olive oil, lime juice, chili powder, and salt. Mix and set aside to let the flavors meld.
- Boil the diced potatoes in salted water until tender, about 15 minutes. Drain and return to the pot. Add butter, parsley, garlic powder, salt, and pepper. Toss to combine and serve warm.
Notes
- These side dishes can be made ahead of time for convenience.
- Feel free to customize the coleslaw by adding apples or raisins for a sweet twist.
- For a spicy kick, add jalapeños to the corn salad.
