  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can (15 oz) diced tomatoes, with juices
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1 cup corn (fresh or frozen)
  • Fresh parsley for garnish (optional)

Instructions

  1. In the crock pot, combine the diced onion, minced garlic, sliced carrots, sliced celery, diced bell pepper, and diced zucchini.
  2. Add the diced tomatoes (with their juices), kidney beans, black beans, vegetable broth, oregano, cumin, black pepper, and salt.
  3. Stir everything together until well mixed.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, stir in the corn.
  6. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley if desired.
