Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the vegetable broth and add the canned diced tomatoes and beans. Bring the soup to a boil.
  4. Reduce the heat and let it simmer for about 20 minutes. Add the frozen corn and your choice of spices, salt, and pepper. Simmer for another 5-10 minutes.
