  • 4 New England-style hot dog buns
  • 2 tablespoons unsalted butter, for toasting
  • Leafy romaine or butter lettuce, for serving

Instructions

  1. In a large bowl, combine the chopped lobster meat, mayonnaise, lemon juice, celery, red onion, and chives.
  2. Season with salt and pepper to taste. Mix gently until all ingredients are well combined.
  3. In a skillet, melt the butter over medium heat. Place the hot dog buns cut-side down in the skillet and toast until golden brown.
  4. Remove the buns from the skillet and place a leaf of lettuce in each bun.
