- 8 oz pasta of your choice
- 1 cup ricotta cheese
- 1 lemon, zested and juiced
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a large bowl, combine ricotta cheese, lemon zest, and lemon juice. Stir until smooth.
- Add the cooked pasta to the skillet with spinach and garlic. Pour the ricotta mixture over the pasta and toss to combine, adding reserved pasta water as needed to reach desired creaminess.
- Season with salt and pepper to taste.
- Serve warm, topped with grated Parmesan cheese and additional lemon zest if desired.
