These lemon bars have a perfectly tangy filling and a buttery shortbread crust, making them the perfect treat for any occasion.

- 1 cup (120g) all-purpose flour
- 1/2 cup (60g) powdered sugar
- 1/4 teaspoon salt
- 1/2 cup (113g) unsalted butter, softened
- 2 large eggs
- 1 cup (200g) granulated sugar
- 1/4 cup (60ml) freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together the flour, powdered sugar, and salt. Add the softened butter and mix until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes or until lightly golden.
- In a separate bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until well combined.
- Pour the lemon filling over the baked crust. Return to the oven and bake for an additional 20 minutes until the filling is set and slightly golden.
- Allow the bars to cool completely in the pan. Once cool, dust with powdered sugar and cut into squares.
Notes
- For a stronger lemon flavor, add more lemon zest.
- Store leftovers in the refrigerator for up to 3 days.
- These bars can be made a day in advance for easier serving.
