These lemon bars have a perfectly tangy filling and a buttery shortbread crust, making them the perfect treat for any occasion.


Ingredients

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (60g) powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • 1/4 cup (60ml) freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, powdered sugar, and salt. Add the softened butter and mix until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared baking dish. Bake for 15 minutes or until lightly golden.
  4. In a separate bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until well combined.
  5. Pour the lemon filling over the baked crust. Return to the oven and bake for an additional 20 minutes until the filling is set and slightly golden.
  6. Allow the bars to cool completely in the pan. Once cool, dust with powdered sugar and cut into squares.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • Store leftovers in the refrigerator for up to 3 days.
  • These bars can be made a day in advance for easier serving.
