- 4 pieces Boneless, skinless chicken breasts
- 2 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 2 tablespoons Fresh rosemary, chopped
- 2 tablespoons Fresh thyme, chopped
- 4 cups Potatoes, diced
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, rosemary, and thyme.
- Add the diced potatoes to the bowl and toss until they are evenly coated with the herb mixture.
- Spread the potatoes in a single layer on a baking sheet.
- In the same bowl, add the chicken breasts and coat them with the remaining herb mixture.
- Place the chicken breasts on the baking sheet with the potatoes.
- Bake in the preheated oven for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and tender.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
Notes
- For extra flavor, marinate the chicken in the herb mixture for a couple of hours before baking.
