Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoons Fresh rosemary, chopped
  • 2 tablespoons Fresh thyme, chopped
  • 4 cups Potatoes, diced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, garlic powder, paprika, salt, black pepper, rosemary, and thyme.
  3. Add the diced potatoes to the bowl and toss until they are evenly coated with the herb mixture.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. In the same bowl, add the chicken breasts and coat them with the remaining herb mixture.
  6. Place the chicken breasts on the baking sheet with the potatoes.
  7. Bake in the preheated oven for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and tender.
  8. Remove from the oven and let the chicken rest for 5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken in the herb mixture for a couple of hours before baking.
  • Feel free to substitute the herbs with your favorites such as parsley or oregano.
