How to Make Homemade Lasagna Noodles: 5 Foolproof Steps

  • Author: ushinzomr

Description

Learn how to make homemade lasagna noodles from scratch with this step-by-step guide. Fresh, tender, and perfectly shaped, these noodles will elevate your lasagna dish to a whole new level. This recipe will show you how to create the perfect pasta dough and roll it out for layering with your favorite sauces and cheeses.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (optional)
  • Semolina flour for dusting

Instructions

  1. In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it.
  2. Add olive oil, if using. Using a fork, beat the eggs gently, then gradually incorporate the flour from the edges of the well until a shaggy dough forms.
  3. Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
  5. After resting, divide the dough into four equal pieces. Keep the pieces you are not currently using covered to prevent them from drying out.
  6. Using a pasta machine or rolling pin, roll out one piece of dough to your desired thickness (about 1/16 inch for lasagna). Dust with semolina flour as needed to prevent sticking.
  7. Cut the rolled dough into rectangular sheets suitable for layering in your lasagna.
  8. Repeat the rolling and cutting process with the remaining pieces of dough.
  9. Your homemade lasagna noodles are now ready to be used! Cook them briefly in boiling salted water for 1-2 minutes before layering in your lasagna, or use them fresh without pre-cooking if your recipe allows.

Notes

  • For a richer flavor, you can add spinach or beet puree to the dough for colored noodles.
  • Be sure to keep your work surface and dough lightly floured to prevent sticking.
  • To store, layer the noodles between sheets of parchment paper and keep them in an airtight container in the refrigerator for up to 2 days, or freeze for longer storage.
