- In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it.
- Add olive oil, if using. Using a fork, beat the eggs gently, then gradually incorporate the flour from the edges of the well until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
- After resting, divide the dough into four equal pieces. Keep the pieces you are not currently using covered to prevent them from drying out.
- Using a pasta machine or rolling pin, roll out one piece of dough to your desired thickness (about 1/16 inch for lasagna). Dust with semolina flour as needed to prevent sticking.
- Cut the rolled dough into rectangular sheets suitable for layering in your lasagna.
- Repeat the rolling and cutting process with the remaining pieces of dough.
- Your homemade lasagna noodles are now ready to be used! Cook them briefly in boiling salted water for 1-2 minutes before layering in your lasagna, or use them fresh without pre-cooking if your recipe allows.
