  • 1 teaspoon mustard seeds

Instructions

  1. In a large pot, combine water, kosher salt, sugar, pink curing salt, pickling spices, garlic, black peppercorns, coriander seeds, and mustard seeds.
  2. Bring the mixture to a boil, stirring until the salt and sugar are fully dissolved.
  3. Remove the pot from heat and allow the brine to cool completely.
  4. Once cooled, place the brisket in a large, non-reactive container or a brining bag.
  5. Pour the brine over the brisket, ensuring it is fully submerged. If necessary, add more water to cover the meat.
  6. Seal the container or bag tightly and refrigerate for 5 to 7 days, turning the brisket every couple of days to ensure even brining.
