Homemade Lasagna Noodles: 5 Steps to Perfectly Soft and Silky

  • 2 cups all-purpose flour, plus more for dusting
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Water, as needed

Instructions

  1. In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well.
  2. Add the olive oil to the eggs. Using a fork, slowly incorporate the flour into the egg mixture until a dough begins to form.
  3. Knead the dough on a floured surface for about 8-10 minutes until it is smooth and elastic. If the dough is too dry, add a little water, one teaspoon at a time.
  4. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
  5. After resting, divide the dough into four pieces. Keep the pieces you are not using covered to prevent drying out.
  6. Roll out one piece of dough on a floured surface or using a pasta machine until it is thin and translucent, about 1/16 inch thick.
  7. Cut the rolled-out dough into sheets that will fit your lasagna dish. Dust the sheets lightly with flour to prevent sticking.
  8. Repeat the rolling and cutting process with the remaining pieces of dough.
  9. Cook the lasagna noodles in boiling salted water for 1-2 minutes until just al dente. Drain and lay them flat on a clean kitchen towel.

Notes

  • Make sure to keep the dough covered while working to avoid drying out.
  • You can use a pasta machine for easier and more uniform rolling.
  • If you prefer a firmer noodle, reduce the cooking time slightly.
