- 2 cups all-purpose flour, plus more for dusting
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- Water, as needed
Instructions
- In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well.
- Add the olive oil to the eggs. Using a fork, slowly incorporate the flour into the egg mixture until a dough begins to form.
- Knead the dough on a floured surface for about 8-10 minutes until it is smooth and elastic. If the dough is too dry, add a little water, one teaspoon at a time.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
- After resting, divide the dough into four pieces. Keep the pieces you are not using covered to prevent drying out.
- Roll out one piece of dough on a floured surface or using a pasta machine until it is thin and translucent, about 1/16 inch thick.
- Cut the rolled-out dough into sheets that will fit your lasagna dish. Dust the sheets lightly with flour to prevent sticking.
- Repeat the rolling and cutting process with the remaining pieces of dough.
- Cook the lasagna noodles in boiling salted water for 1-2 minutes until just al dente. Drain and lay them flat on a clean kitchen towel.
Notes
- Make sure to keep the dough covered while working to avoid drying out.
- You can use a pasta machine for easier and more uniform rolling.
- If you prefer a firmer noodle, reduce the cooking time slightly.
