- 1 lb chicken breast, diced
- 2 cups broccoli florets

- Juice of 1 lemon
Instructions
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add diced chicken breast to the skillet and season with paprika, salt, and pepper. Cook until the chicken is no longer pink.
- In a separate pot, bring vegetable broth to a boil. Add quinoa, reduce heat, and simmer for about 15 minutes or until quinoa is fluffy.
- Meanwhile, add broccoli florets to the skillet with chicken and cook until tender, about 5 minutes.
- Once the quinoa is done, fluff it with a fork and stir in lemon juice.
- Serve the chicken and broccoli over the quinoa and enjoy!
