- 1 cup Quinoa
- 1 cup Cherry tomatoes
- 1 Cucumber
- 1 Bell pepper
- 1/4 Red onion
- 1 Avocado
- 2 tablespoons Olive oil
- 2 tablespoons Lemon juice

- 1/4 cup Fresh parsley
Instructions
- In a medium pot, bring 2 cups of water to a boil.
- Add the rinsed quinoa and a pinch of salt, reduce heat to low, cover, and simmer for 15 minutes.
- While the quinoa cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion.
- In a large bowl, combine the cooked quinoa with the cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the quinoa salad and toss to combine.
- Serve the quinoa salad topped with sliced avocado.
