- 4 boneless, skinless chicken breasts
- 1 cup whole wheat breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup marinara sauce (store-bought or homemade)
- 1 cup shredded part-skim mozzarella cheese
- Olive oil spray
Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Spray a baking dish with olive oil spray. Dip each chicken breast into the breadcrumb mixture, coating evenly, and place them in the baking dish.
- Spray the tops of the chicken breasts lightly with olive oil spray.
- Bake in the preheated oven for 20 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- Remove the chicken from the oven and spoon marinara sauce over each piece, then top each with shredded mozzarella cheese.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
